Soups

Sopa de Cação  Dogfish Soup

1- Clean the dogfish taking its skin off and cut it to pieces, sprinkling it with salt.
2- Meanwhile mash up the coriander, the garlic and the salt in a mortar.
3- In a pan put olive oil and the previous mixture. Add some bay leaves and a little paprika dissolved in water.
4- Let it simmer a little and add water and the chopped dogfish.
5- Let the fish cook and add a “pome” done with water, flour and vinegar (to thicken the broth slightly).
6- Cut bread into pieces to a bowl and pour the broth over it. Eat with the dogfish.

Gaspacho Gazpacho

1- Mash up the garlic and salt in a mortar. Peel, seed, and finely chop the tomatoes, cucumber and the bell pepper.
2- In a bowl put the mashed garlic and salt, add olive oil, vinegar and fresh water. With a spoon mix the ingredients.
3- Then add the chopped tomatoes, cucumber and bell pepper. Spice them with oreganos.
4- Cut the bread into pieces and add them to the broth.
5- The gazpacho can be served with sausage and ham cut into small pieces, fried mackerel, fried sprat or grilled sardines.

 

Meats

Ensopado de Borrego à moda do Baixo AlentejoLamb Stew

1- In a pan with water and salt boil the lamb.
2- When the meat starts to boil a foam appears. Remove it all.
3- Then mix the spices: olive oil, sliced garlic, some bay leaves and paprika.
4- Reduce the heat and let it cook.
5- Serve with lettuce salad (cut into julienne).
